Pichón is an itinerant restaurant and a culinary research and experimentation project that was founded in Mexico City in 2012. In Pichón, it is valued that food should be a vehicle to strengthen the community from cultivation to consumption. It supports farmers who share the land by planting their gardens, cooking together, and sharing the table with friends, neighbors, and family.
During his residency at Casa Wabi, chef Niki Nakazawa prepared the Wabi cookbook, based on local and traditional ingredients, so residents and staff of Casa Wabi can prepare the recipes created.

Pichón is an itinerant restaurant and a culinary research and experimentation project founded in Mexico City in 2012.
We are inspired by Mexico City’s street food, Mexican rural culinary traditions and the gastronomical revolution that has transformed food culture in North America during the las 50 something years. We believe that food should be a vehicle to strengthening our community from crop to consumption, by supporting the farmers that share our city, planting our own vegetable gardens, working together and sharing the table with our friends, neighbours and families.
