In Pichón, it is valued that food should be a vehicle to strengthen the community from cultivation to consumption. It supports farmers who share the land by planting their gardens, cooking together, and sharing the table with friends, neighbors, and family.
During his residency at Casa Wabi, chef Niki Nakazawa prepared the Wabi cookbook, based on local and traditional ingredients, so residents and staff of Casa Wabi can prepare the recipes created.
