Community Project
The main idea of his project was to work closely with the kitchen team at Fundación Casa Wabi. Through exchanging dialogues and learning about local cuisine, he aimed to assist in any way needed, from accompanying them to purchase ingredients, preparing dishes, to serving them, washing ingredients, and presenting them at the table. His focus was always on supporting Emi, the head chef, in whatever she required.
During his time in the kitchen, he intended to take notes, photographs, and create a detailed record of Emi’s recipes and practices. This record included quantities, times, precise instructions, professional photos of the dishes, and all relevant information to later categorize it. The categories he identified were: waters, breakfasts, appetizers, main courses, and desserts.
The main goal of the project was to compile a thorough and visually appealing record of all of Emi and her team’s creations, eventually resulting in a book with their best recipes. In addition to the recipes, the book would also include interviews with the kitchen team, personal stories, some background on their origins and the communities they belong to, along with details about local crafts and typical dishes of the region.
